Getting a chimney installed so it actually works
A chimney is one of the few kitchen appliances whose performance is determined more by installation than by the unit itself. A mid-range chimney installed well comfortably outperforms a premium one installed badly, and most of the difference is in the ducting.
Size it for the kitchen and the cooking. Suction is rated in cubic metres per hour, and the requirement scales with kitchen volume and how you cook. Indian cooking -- tempering, frying, high heat -- needs meaningfully more extraction than the same kitchen would in Europe, and manufacturers' generic guidance often reflects the latter. Undersizing is the most common purchase mistake.
Mounting height is not a preference. Typically 65 to 75cm above a gas hob. Too high and it cannot capture the plume before it spreads into the room. Too low and it is a burn and cleaning hazard. People routinely mount higher than optimal for headroom, then find the chimney disappointing.
The duct is where performance is won or lost. Keep it as short as possible, use as few bends as possible, never reduce the diameter below the chimney's outlet, and prefer smooth rigid duct over corrugated flexible wherever the route allows. Corrugated flexible ducting has substantially higher resistance than smooth duct of the same size, and crushing it to fit above a false ceiling makes it dramatically worse. If the shortest external wall route means moving the hob position during a kitchen fit-out, that is worth considering while it is still possible.
The non-return damper. Stops outside air, smells and insects coming back in. It must be fitted the right way round -- fitted reversed, it blocks the outgoing airflow instead, and the chimney will never work properly from day one.
Ducted or ductless? Ducted extracts to the outside and is substantially more effective; always the first choice where a route exists. Ductless recirculates through a charcoal filter and returns air to the kitchen -- it removes odour reasonably but does far less about heat and humidity, and it commits you to buying charcoal filters indefinitely. Choose it only where ducting is genuinely impossible.
