How frost-free actually works, and what breaks
A frost-free fridge is not one that never forms frost. It forms frost constantly on its evaporator, and then melts it off automatically several times a day. That automatic melt is the whole trick, and when it fails the frost simply accumulates until it becomes a solid block of ice.
The sequence of failure. First, ice builds up on the evaporator behind the rear panel of the freezer, out of sight. As it thickens, it starts blocking the airflow that the evaporator fan pushes through. The fridge compartment warms up first, because it is fed by air routed from the freezer -- so the classic early symptom is a freezer that still works while the fridge section goes warm. Then the fan blade begins striking the ice, producing a loud whirring or scraping that stops when you open the freezer door. Eventually airflow stops entirely and nothing cools.
The defrost heater. A resistance element beneath the evaporator that warms up periodically to melt the frost. When it burns out, the melting never happens. This is the most common failure in the chain and it is straightforward to test for continuity.
The bimetal thermostat and thermal fuse. These are the safety components that decide when it is cold enough to warrant a defrost, and cut the heater off once it has warmed sufficiently. When the bimetal fails open, the heater never receives power even though the heater itself is fine -- which is why the heater alone should not be assumed to be the fault.
The defrost timer or control board. Older fridges use a mechanical timer that periodically switches from cooling to defrost. Newer ones handle it in software. Either can fail such that the defrost cycle is never initiated.
The temporary fix that confirms the diagnosis. Unplugging the fridge for a day with the doors open melts everything, and cooling returns to normal afterwards -- for a week or two, until the ice rebuilds. That is a useful diagnostic signal rather than a repair, and if that describes your fridge, the defrost circuit is the fault.
Clear the drain too. Once the melting works again, all that water needs somewhere to go, so the defrost drain should be cleared as part of the same job.
