Two opposite symptoms, one small component
The thermostat is the fridge's decision-maker: it measures the cabinet temperature and tells the compressor when to run and when to stop. When it fails it does so in one of two directions, and knowing which you have narrows the diagnosis immediately.
Failing on: everything freezes. If the thermostat never tells the compressor to stop, the fridge just keeps cooling. Milk freezes in the door, vegetables in the crisper turn to ice, and the fridge compartment behaves like a second freezer. People often respond by turning the dial down, which does nothing because the control is not responding to the dial at all. Your electricity bill rises noticeably too, since the compressor is essentially running continuously.
Failing off: nothing cools. If the thermostat wrongly reads the cabinet as already cold, it never calls for cooling. The compressor stays silent, the fridge slowly warms to room temperature, and it looks exactly like a dead compressor from the outside -- except the compressor is completely healthy. This is a genuinely common misdiagnosis and an expensive one to get wrong.
Mechanical versus electronic. Older and simpler fridges use a mechanical thermostat with a capillary sensing bulb clipped near the evaporator; the numbered dial is directly connected to it. Newer fridges use a thermistor feeding a control board, with the dial or touch panel just an input to software. Both fail, and both are testable -- a mechanical thermostat by continuity across its temperature range, a thermistor by measuring its resistance against the specified curve.
Sensor placement matters. A sensing bulb that has been knocked out of its clip, or a thermistor sitting in the path of a blocked vent, reads the wrong temperature and produces exactly the same symptoms as a failed part. It is worth checking before replacing anything.
The damper. On many double-door models a mechanical damper controls how much cold air passes into the fridge section. When it sticks, one compartment is wrong while the other is fine -- which can look like a thermostat fault but is a separate part.
